What does HACCP Level 2 cover?

Six modules over 3-4 hours: an overview of the HACCP principles, hazard identification and analysis, critical control points, monitoring procedures, corrective actions, and documentation and record keeping. It is written for catering and retail rather than large-scale production, so the examples are kitchen and counter operations.

By the end you should be able to read your workplace’s food safety plan, understand why each check exists, and know what to do when a check fails.

What are the seven principles of HACCP?

Conduct a hazard analysis, determine the critical control points, establish critical limits for each one, set up monitoring, decide the corrective action when a limit is breached, verify that the system works, and keep records. HACCP stands for Hazard Analysis and Critical Control Point.

The principles come from the Codex Alimentarius and are the same worldwide. What changes between businesses is which steps count as critical: a chilled sandwich unit and a rotisserie counter reach different answers.

Article 5 of retained Regulation (EC) 852/2004 requires food business operators to put in place and maintain permanent procedures based on HACCP principles. The law requires the procedures, not a named certificate, and training is how staff demonstrate they can operate those procedures when an environmental health officer asks.

Small caterers often run the Food Standards Agency’s Safer Food, Better Business pack instead of writing a plan from scratch. It is built on the same principles, so the course content still applies directly.

Who needs HACCP Level 2?

Food handlers and supervisors in catering and retail who work to a food safety plan or help maintain one. It is commonly taken alongside Food Hygiene Level 2, which covers personal hygiene and safe handling, while HACCP covers the system those habits sit inside.

Anyone responsible for writing or reviewing the plan rather than following it should go to Level 3.

How long does HACCP Level 2 take?

Between three and four hours of study, self-paced, and you can split it across several sittings if that suits your shift pattern better.
