Food safety training

Food hygiene certificate: levels 1, 2 and 3

A food hygiene certificate is the document you receive after passing a food safety course. It names you and the course you completed. Employers can keep it with workplace training records when assessing whether your learning matches the job.

This page is for anyone who has been told to get one: a new kitchen starter, a manager certifying a team, a market trader, someone selling cakes from a home kitchen. Below are the levels, who each is for, how long each takes, and what UK law actually asks of you.

130+ courses from £35 per person for 12 months. Choose 12, 24 or 36 months. The 24-month plan costs £59 paid once and is £29.50 per year equivalent; the 36-month plan costs £79 paid once, is £26.33 per year equivalent, and save £26 over 36 months. Pay once, VAT included. No automatic renewal.

Which food hygiene course do you need?

Compare these five courses with your responsibilities. All five are CPD accredited and part of the 130+ courses included in every plan, starting at £35 for 12 months per person.

Food Hygiene Level 1

Level 1

Awareness training for people who work around food rather than with it: bar staff, delivery drivers, front-of-house workers and volunteers who handle food occasionally. It covers common food hazards, personal hygiene, safe handling, cleaning fundamentals and your legal responsibilities.

2-3 hours, self-paced

Food Hygiene Level 2 for Catering

Level 2

For catering roles involving food preparation, handling or service. Compare the outline with the tasks you perform and the employer's requirements. It covers contamination and microbiology, storage and temperature control, cleaning and disinfection, HACCP principles, and legal duties.

4-5 hours, self-paced

Food Safety Level 3 for Supervisors

Level 3

Written for supervisors, managers and head chefs who are accountable for what the kitchen does. HACCP system implementation, microbiological hazards in depth, pest control management, and the duty to train and supervise the food handlers reporting to you.

3-5 hours, self-paced

HACCP Level 2 for Catering and Retail

HACCP

Food hygiene training introduces HACCP. This course works through it properly: hazard identification and analysis, critical control points, monitoring procedures, corrective actions, and the documentation auditors ask to see. It is often taken alongside a food hygiene certificate.

3-4 hours, self-paced

Allergen Awareness and Food Intolerances

Allergens

The 14 allergens that must be declared by law, Natasha's Law labelling for prepacked for direct sale food, cross-contamination prevention, and responding to an allergic reaction. Match allergen training and workplace instruction to the food and customer information each person handles.

2-3 hours, self-paced

Food Safety Level 3 Supervisors, managers and head chefs 3-5 hours £27-£130 per certificate
HACCP Level 2 Food handlers and supervisors running a HACCP plan 3-4 hours £15-£30 per certificate
Allergen Awareness Everyone who cooks, serves or sells food 2-3 hours £10-£25 per certificate

The last column is what single certificates typically go for elsewhere in the UK. Chefs Bay Academy access starts at £35 for 12 months per person. Choose 12, 24 or 36 months; all five are among the 130+ courses included in every plan. For the provider-by-provider numbers, we put eight UK training companies side by side here.

Certifying a whole team

Each learner needs one licence. For 6 people, 12 months of access costs £189 in total, VAT included. This includes the 10% team discount on the £210 list total. Every learner gets the same 130+ courses for that term.

Food Hygiene Level 2 and Allergen Awareness are included alongside fire safety, manual handling and HACCP. You can compare access terms and quantities on the pricing page before paying.

Each person needs their own account and email address and downloads their own certificates. Follow your confirmation page after payment to arrange learner access. The training platform emails login details after registration, and learners can then study at their own pace.

What is a food hygiene certificate?

An Academy certificate records the CPD course you completed and the date you passed its assessment. It is not a regulated qualification or a licence to operate a food business. Check the award, syllabus and assessment against any requirements set by the employer.

The levels map to how much risk sits in the role. Level 1 is awareness for people with light or occasional food contact. Level 2 covers food handling in more detail. Level 3 is written for supervisors and managers responsible for food safety procedures. Allergen and HACCP training sit alongside these rather than above them, because both apply to kitchen staff and supervisors alike.

A certificate is not a licence to trade. Registering a food business with your local council is a separate step, and no amount of training replaces it.

Keep a record that identifies the learner, subject, provider and completion date. Include workplace instruction and checks of understanding as well as course certificates. A course title alone may not explain which skills were covered, so retain the outline where useful.

Do you legally need one?

No UK law says a food handler must personally hold a certificate. The duty sits on the business. Regulation (EC) 852/2004, which continues to apply in UK law, requires food business operators to make sure food handlers are supervised and instructed and/or trained in food hygiene matters commensurate with their work activity, and that whoever develops the food safety management procedures has had adequate training in applying HACCP principles. The Food Standards Agency is clear that the training can be evidenced in more than one way: a course, on-the-job instruction, or prior experience can all count.

GOV.UK's staff training guidance says food handlers do not have to hold a food hygiene certificate. It recognises courses, on-the-job learning, self-study and relevant experience. Businesses must be able to show suitable skills and up-to-date training and keep records for inspection.

Different roles need different evidence. A barista pouring coffee and reheating pastries is in a different risk category to a chef running a cook-chill service, and the training should reflect that. Care homes, schools and food manufacturers usually go further again, because their customers include people who cannot safely tolerate a mistake.

Working for yourself does not change the duty, it just moves it onto you. If you sell cakes from a home kitchen, run a market stall, take bookings as a private chef, or deliver meal prep boxes, you are the food business operator, and the training expectation applies to you and to anyone who helps you. Check your local authority's guidance for the type of food business you plan to run.

Volunteers handling food also need guidance suited to their tasks. Check the arrangements for the event or organisation rather than assuming a particular awareness course covers everything involved.

How long does a food hygiene certificate last?

A food hygiene course-completion certificate has no universal legal expiry date. Follow the employer's refresher policy, and review training after changes to duties or procedures, a gap away from the work, or an identified problem with understanding.

Your Chefs Bay Academy licence covers your chosen 12, 24 or 36 month access term. Retakes during that term are unlimited, so a refresher within it costs nothing extra. The library access term is separate from certificate validity and your employer's refresher policy. Print the certificate, keep the download, and add it to the training file the moment you pass. Inspectors ask for records, not memories.

A three-year requirement, where specified, is a policy to check with the employer rather than a universal statutory deadline. Before applying for a role, ask which training record and completion date will meet its requirements.

Free food hygiene certificates

Free learning can contribute to food safety knowledge and can be recorded without a certificate. Check its syllabus, assessment and suitability for the tasks involved. An introduction may leave gaps, and it may not meet a requirement for a specified qualification.

Read what a free course includes before you spend the afternoon on it. Ours are CPD accredited and assessed, and the certificate downloads the same day you pass. Full library access starts at £35 for 12 months per person. All plans include the three food hygiene levels, HACCP, allergens and the rest of the course library. We explain what CPD accreditation means and what it does not on our accreditation page.

Common questions

Food hygiene certificate questions

Do I need a food hygiene certificate to work with food?

Food handlers do not have to hold a food hygiene certificate. Businesses must make sure staff have suitable skills and up-to-date training for their role. A certificate can record a completed course, while workplace instruction and checks of understanding remain necessary. Ask your employer what evidence the role requires.

How long does a food hygiene certificate last?

There is no universal legal expiry date for a food hygiene course-completion certificate. Follow the employer's refresher policy and review training when duties or procedures change, after time away, or when a knowledge gap is identified. The course access term is separate from certificate validity.

Which food hygiene level do I need?

Level 1 introduces awareness, Level 2 covers food handling in more detail, and Level 3 addresses supervisory responsibilities. Compare the modules with your actual work and ask the employer which training, award and practical instruction the role requires.

Can I get a food hygiene certificate online?

Yes. Academy courses are studied online at your own pace, and passing the assessment produces a CPD course-completion certificate. It is not a regulated qualification. Check the employer's requirements before enrolling, including any specified award or practical assessment.

Is a free food hygiene certificate good enough?

Check what the course teaches, how understanding is assessed and what evidence your employer needs. Free learning can be useful and recorded even without a certificate. A free introductory module may not cover every task or a specifically required qualification.

How quickly can I get certified?

Food Hygiene Level 1 takes two to three hours and Level 2 takes four to five, both self-paced. After payment, use the set-up link on your confirmation page to register with the email address you paid with. The training platform emails your login details after registration. Your CPD accredited certificate is ready to download the moment you pass the assessment at the end.
