Who needs Food Hygiene Level 1?

Level 1 is the awareness level, written for people who handle low-risk or wrapped food rather than preparing it. Bar staff, waiting staff, delivery drivers, retail assistants and volunteers at community events are the typical audience, along with anyone starting their first job around food.

Kitchen staff who prepare, cook or chill open high-risk food need Level 2 instead. Level 1 will not satisfy an employer checking training for a food preparation role.

What does the Level 1 course cover?

Six short modules over 2-3 hours: an introduction to food safety, personal hygiene basics, common food hazards, safe food handling, cleaning fundamentals, and your legal responsibilities. Hazards are grouped the way inspectors group them, as microbiological, chemical, physical and allergenic.

Personal hygiene takes up more of the course than newcomers expect, because handwashing, reporting illness and correct use of protective clothing are where most low-risk roles actually create risk.

What is the difference between Level 1 and Level 2 food hygiene?

Level 1 explains why the rules exist and what your responsibilities are. Level 2 goes into the controls themselves in far more detail, covering temperature control, cross-contamination, cleaning schedules and food safety management systems for people who handle open, high-risk food every shift.

No UK law requires a food handler to hold a certificate. Retained Regulation (EC) 852/2004 requires food business operators to make sure food handlers are supervised, instructed and trained in food hygiene matters commensurate with their work activity, and a certificate is simply the standard way of evidencing that when an environmental health officer asks.

The Food Safety Act 1990 sits behind it, making it an offence to sell food that is unsafe or not of the nature, substance or quality demanded.

How long does Food Hygiene Level 1 take?

Two to three hours of study, self-paced, and it can be split across more than one shift. The CPD accredited certificate is downloadable the moment you pass, so a new starter can join a rota with dated evidence of training on the same day they are hired.
