What does Level 2 food hygiene cover?

The course runs across seven modules: food safety hazards and contamination, microbiology and food poisoning, food storage and temperature control, personal hygiene for food handlers, cleaning and disinfection, HACCP principles, and the legal requirements around due diligence.

Cross-contamination and temperature control sit at the centre of it, because those are the two controls most kitchen procedures are built around. The material is written for people working a service, not for a classroom.

UK food law requires food handlers to be supervised and instructed or trained in food hygiene matters in a way that matches the work they do (Regulation (EC) 852/2004, retained in UK law). The law names training, not a certificate.

A Level 2 certificate is simply the evidence employers and environmental health officers accept. If an inspector asks how your kitchen team was trained, a dated certificate answers the question in seconds. A verbal assurance rarely does.

Does an online food hygiene certificate count?

Yes. The regulations do not specify how training must be delivered, so online study carries the same standing as a classroom session provided the content matches the role. This course is CPD accredited and the certificate names you, the course and the date you passed.

How long does the course take?
