What does Food Hygiene Level 2 for Manufacturing cover?

Eight modules across 4-5 hours: food hygiene in a manufacturing setting, UK food safety legislation and compliance, microbiological, chemical and physical hazards, contamination prevention in production, temperature control, personal hygiene and protective clothing, cleaning and disinfection of production areas, and Good Manufacturing Practice.

The syllabus assumes a production line rather than a kitchen, so the controls are the ones a factory actually operates: zoning, changing regimes, line cleaning and documented checks.

How is manufacturing food hygiene different from catering?

Scale and traceability. A catering error affects one plate, while a production error can travel through a whole batch and out to several retailers before anyone notices, so manufacturing puts far more weight on segregation between raw and ready-to-eat zones, batch coding, foreign body control and cleaning that is validated rather than assumed.

Protective clothing rules are stricter for the same reason. Changing between zones, hair and beard covering, and a ban on personal items above the waist are standard factory controls that rarely appear in a restaurant.

What is Good Manufacturing Practice?

GMP is the set of documented, repeatable conditions a site works to so that every batch is produced the same way: hygienic design and layout, controlled personnel flow, planned cleaning, planned maintenance, control of glass and hard plastic, and records that show each of those happened.

GMP and HACCP are not the same thing. GMP is the baseline environment; HACCP identifies the specific points where control is critical to safety. Sites usually run both, and HACCP Level 2 for manufacturing covers the second half.

Who needs this course?

Production operatives, factory staff, quality controllers and production managers who handle food or work where open product is exposed. Engineers, cleaners and agency staff entering production areas are often included too, since they move between zones more than anyone on the line.

Retained Regulation (EC) 852/2004 requires food business operators to ensure food handlers are supervised, instructed and trained in food hygiene commensurate with their work. No certificate is named in the law, but customer audits and third-party standards routinely ask for individual training records, and a dated certificate is the simplest thing to produce.
